A Note From the Winemaker
As we bask in the warmth of summer, I wanted to share some exciting updates from our vineyard and cellar with you.
The vineyard is in full swing with veraison nearly complete, and the fruit is beginning to develop its sugars. The vines are in great shape, and we’re down to the final touches, like dropping some overlapping fruit to ensure even ripening. We’re also keeping a close eye on the irrigation system, ensuring it’s functioning perfectly to support the vines through these crucial weeks. While we haven’t started our harvest in Sonoma just yet, we’re gearing up to pick our newest white varietal, Torrontes, from our Alta Mesa vineyard. This is an exciting addition to our lineup, and we’re thrilled to see how it develops. We’re anticipating a yield of about 2 tons, which will give us approximately 120 cases. We plan to bottle this in December 2024, alongside our 2024 Rosé. I can’t wait for you all to try it!
With the upcoming harvest, all our 2023 vintage wines have been “put to bed” after their final handling. The next time we work with them will be after the harvest, as we turn our focus to the new vintage. The cellar is quiet now, but the anticipation for what’s to come is palpable. 2022 Estate Ballfield Syrah

In the waning years of an extensive drought, the Ballfield Syrah Vineyard felt and benefitted from the stress. As yields fell, power and expressiveness mounted. This vintage puts on full display the spice, grip and silkiness this vineyard is known for. Fire up the grill and get those steaks ready!
2022 Mountain Magic Cabernet Sauvignon
September & October Wine Club Release
Sometime Cabernet Sauvignon is a statement. It proudly proclaims its sense of place and its power. Such is Mountain Magic, the debut vintage of a wine that captures the highest reaches of the Ty Caton Vineyards as magic in a bottle. Bold, expressive, dominating…it balances the depth and complexity of mountain cabernet, tannin and a beautiful lingering finish.

Starts bold/stays bold. A sun baked vineyard halfway up the side of Moon Mountain produces stunning fruit, graphite, grippy tannins and the type of layered finish that mountain cab lovers crave and often pay many times the price to acquire. The first sip showcases Ty’s winemaking style at its peak.

Brining unique layers of soil together as an expression of a very special terroir, the Little Hill Vineyard puts a creaminess and distinctive minerality into play. Add a unique blueberry essence to the finish and you experience a gorgeous fruit driven Cabernet.

Spring Recipe
A Perfect Summer Dinner: Slow Cooker Fig Balsamic and Syrah Pot Roast
As the summer sun sets, there’s nothing quite like a hearty yet sophisticated meal to end the day. This Slow Cooker Fig Balsamic and Red Wine Pot Roast is the perfect choice for those warm evenings when you crave comfort without the need for heavy cooking. The rich, deep flavors of the roast pair beautifully with a glass of our Ballfield Syrah, making it an ideal summer dinner that delights the senses.
Syrah complements the sweet and tangy notes of fig balsamic vinegar in this recipe. The wine’s dark fruit undertones enhance the savory elements of the roast, creating a harmonious blend that elevates this dish to a new level of indulgence.
Whether you’re hosting a small gathering or enjoying a quiet dinner at home, this pot roast is easy to prepare and full of flavor, making it a must-try recipe for the season.
This recipe serves 4-6.
Ingredients:
- 3 lb Boneless Beef Roast (chuck always works well)
- 1 Cup Beef Broth
- 1/2 Cup Fig Balsamic Vinegar
- 1/2 Cup Ty Caton Estate Ballfield Syrah
- 1 Tablespoon Worcestershire Sauce
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Honey
- 4 Cloves Garlic
Instructions:
- Begin by preheating your slow cooker. A common mistake is forgetting to do so—just like you wouldn’t cook in an oven that hasn’t been preheated.
- While the slow cooker preheats, chop the garlic and combine it with all the other ingredients (except the beef) in a large measuring jug.
- Once preheated, place the beef into your slow cooker and pour the combined ingredients over it. Cook for 4 hours on High or 6-8 hours on Low.
- For a complete meal, you can add potatoes, carrots, or other vegetables to the slow cooker with the beef for a hassle-free roast dinner.
Serve with a glass of Ballfield Syrah and enjoy the perfect summer evening meal!
